This Mediterranean Chicken Stir Fry Recipe is a fast, flavorful one-pan dinner made with juicy chicken, colorful vegetables, lemon, olive oil, and feta. Ready in about 30 minutes, it’s fresh, healthy, and perfect for busy weeknights.
Ingredients
1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
3 tablespoons extra virgin olive oil, divided
Salt and black pepper, to taste
2 medium zucchini, sliced into half-moons
2 red bell peppers, diced
1 large red onion, sliced
2 cups cherry tomatoes, halved
1 cup Kalamata olives, pitted and halved
4 cloves garlic, minced
¼ cup sun-dried tomatoes, chopped
2 teaspoons dried oregano
1 teaspoon dried basil
½ teaspoon dried thyme
Juice of 1 lemon
½ cup feta cheese, crumbled
2 tablespoons fresh parsley, optional garnish
Instructions
Prep all ingredients by chopping the chicken and vegetables before starting.
Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Season and sear the chicken until golden and fully cooked. Remove and set aside.
Add remaining olive oil to the skillet. Sauté red onion and garlic until fragrant.
Add zucchini, bell peppers, cherry tomatoes, and sun-dried tomatoes. Cook until tender-crisp.
Return chicken to the pan. Add oregano, basil, thyme, salt, and pepper. Toss to combine.
Remove from heat and finish with lemon juice, olives, and feta cheese.
Garnish with fresh parsley and serve warm.
