Ingredients
4 flour tortillas
1 cup fresh spinach, chopped
1/2 cup shredded mozzarella cheese
1/2 cup crumbled feta cheese
1 small tomato, diced
1/4 cup red onion, thinly sliced
1 tablespoon olive oil
Black pepper, to taste
Instructions
In a mixing bowl, combine mozzarella, feta, spinach, tomato, red onion, and black pepper. Mix well.
Lay one tortilla flat and spread one-fourth of the filling on half of the tortilla. Fold over to close.
Heat olive oil in a non-stick skillet over medium heat.
Cook the quesadilla for 3–4 minutes until golden and crisp.
Flip carefully and cook another 3–4 minutes until both sides are crispy and the cheese is melted.
Remove from heat, slice into wedges, and serve warm.
Notes
Cook over medium heat to avoid burning the tortilla before the cheese melts.
Feel free to add grilled chicken, chickpeas, or mushrooms for extra protein.
Best enjoyed fresh, but leftovers can be reheated in a skillet for crisp results.
