Description
Million Dollar Chicken Salad is creamy, crunchy, and loaded with rotisserie chicken, sharp cheddar, bacon, and toasted almonds. It’s the kind of easy lunch that tastes “fancy,” but takes almost no effort—perfect for sandwiches, crackers, or lettuce wraps.
Ingredients
3 cups cooked chicken, shredded or cubed (rotisserie is great)
1 cup celery, finely chopped
3 green onions, sliced
1 cup sharp cheddar cheese, shredded
1/2 cup toasted slivered almonds
1/2 cup mayonnaise
1/4 cup sour cream
1/2 cup crispy bacon, crumbled
Salt and pepper, to taste
Instructions
Combine: In a large bowl, add chicken, celery, green onions, cheddar, bacon, and toasted almonds.
Add the creamy base: Spoon in the mayonnaise and sour cream.
Mix: Stir until everything is evenly coated.
Season: Add salt and pepper, starting with a little, then taste and adjust.
Serve: Enjoy on toast, in lettuce wraps, stuffed in avocado/tomato, or with crackers.
Notes
Make-ahead win: Tastes even better after chilling 30–60 minutes.
Storage: Keep in an airtight container in the fridge for 3–4 days.
No almonds? Swap with chopped pecans or sunflower seeds, or leave them out.
Lighten it up: Use Greek yogurt in place of sour cream (or part of the mayo).
Best texture tip: Finely chop the celery so every bite stays creamy + crunchy.
