Description

For the Bisque:

  • 1 lb shrimp, peeled and deveined

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 2 tbsp all-purpose flour

  • 3 cups seafood or chicken broth

  • 1 cup heavy cream

  • 2 cups corn kernels (fresh or frozen)

  • 1 tsp smoked paprika

  • ½ tsp cayenne pepper (adjust to taste)

  • ½ tsp dried thyme

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp Worcestershire sauce

  • 1 tsp hot sauce (optional)

  • 2 green onions, sliced (for garnish)

  • Fresh parsley, chopped (for garnish)


Instructions

  1. Prepare the Base:
    In a large pot, heat butter and olive oil over medium heat. Add onion and bell pepper, cooking for about 5 minutes until softened.

  2. Add Garlic & Spices:
    Stir in garlic, smoked paprika, cayenne, thyme, salt, and pepper. Cook for 1 minute until fragrant.

  3. Make a Roux:
    Sprinkle in flour, stirring continuously for 1–2 minutes to form a thick paste.

  4. Build the Bisque:
    Slowly pour in the broth, stirring to avoid lumps. Bring to a gentle simmer and cook for 10 minutes.

  5. Blend for Smoothness (Optional):
    Use an immersion blender to puree part of the soup, leaving some corn whole for texture.

  6. Add Cream & Worcestershire:
    Stir in heavy cream and Worcestershire sauce until combined.

  7. Cook the Shrimp:
    Add shrimp and cook for 3–5 minutes, until pink and opaque.

  8. Season & Serve:
    Adjust seasoning with more salt, pepper, or hot sauce to taste. Garnish with green onions and parsley. Serve hot with crusty bread.

Notes

Don’t overcook shrimp—they only need a few minutes.
For a lighter option, swap heavy cream with half-and-half or coconut milk.
