Ingredients

  • 4 tablespoons butter (or vegan butter)

  • 1 cup sliced carrots

  • 4 oz mushrooms, sliced

  • 1 large rib celery (or 2 small), thinly sliced

  • 1 large shallot or small onion, chopped

  • Seasoned salt and black pepper, to taste

  • 2 cloves garlic, minced

  • 1 teaspoon poultry seasoning

  • Pinch dried thyme

  • 3 tablespoons gluten-free flour (or all-purpose flour)

  • 2 cups chicken broth or stock

  • 1 cup milk (any kind, unsweetened almond milk works well)

  • 12 oz package gnocchi (gluten-free if needed)

  • 1½ cups shredded cooked chicken breast

  • ½ cup frozen peas


Instructions

  1. Heat a large Dutch oven or soup pot over medium-high heat. Melt the butter. Add carrots, mushrooms, celery, and shallot. Sauté 3–4 minutes until mushrooms release their liquid.

  2. Season with salt and pepper. Continue cooking another 6–7 minutes until vegetables are tender.

  3. Stir in garlic, poultry seasoning, and thyme. Cook 1–2 minutes until fragrant.

  4. Sprinkle flour over the vegetables and stir to coat. Cook for 1 minute. Slowly pour in chicken broth while stirring to prevent lumps. Add milk and bring to a simmer.

  5. Stir in gnocchi. Reduce heat to medium and simmer 5–6 minutes, stirring frequently, until gnocchi are tender and sauce thickens.

  6. Stir in shredded chicken and peas. Heat through. Taste and adjust seasoning as needed. Serve warm.

Notes

If using a 16 oz package of gnocchi, add an extra splash of broth or milk to maintain creaminess.

Rotisserie chicken works perfectly for a faster prep.

To make dairy-free, use vegan butter and non-dairy milk.

Leftovers thicken in the fridge; add a splash of broth when reheating.
