This One Pot Marry Me Beef is the ultimate comfort dish—tender beef stew meat slow-simmered in a creamy, tomato-kissed sauce with herbs and Parmesan. Made entirely in one pot, it’s rich, flavorful, and perfect for cozy nights or impressive dinners with minimal effort.


Ingredients

  • 2 lbs beef stew meat, cubed

  • 2 tbsp olive oil

  • 1 medium onion, diced

  • 4 garlic cloves, minced

  • 2 cups beef broth

  • 1 cup heavy cream

  • 1/2 cup sun-dried tomatoes, chopped

  • 1/2 cup grated Parmesan cheese

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • 1/2 tsp red pepper flakes (optional)

  • Salt and black pepper, to taste

  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat.

  2. Season the beef cubes with salt and pepper, then sear them in batches for 6–8 minutes until browned on all sides. Remove and set aside.

  3. In the same pot, sauté diced onion for 3–4 minutes until softened. Add minced garlic and cook for 30 seconds.

  4. Deglaze the pot with beef broth, scraping up the browned bits with a wooden spoon.

  5. Stir in the heavy cream, sun-dried tomatoes, Parmesan, thyme, oregano, and red pepper flakes (if using). Bring to a gentle simmer.

  6. Return the browned beef to the pot. Reduce heat to low, cover, and simmer for 45 minutes to 1 hour, until the beef is fork-tender and the sauce has thickened.

  7. Taste and adjust seasoning as needed. Garnish with fresh parsley and serve warm.

Notes

Add mushrooms or spinach for a veggie twist.
Serve over mashed potatoes, rice, pasta, or with crusty bread.
Can be made ahead and tastes even better the next day.
To thicken the sauce more, simmer uncovered for the last 10 minutes.
