Ingredients
2 cups shredded mild cheddar
1 (30 oz) bag frozen shredded hash browns
2 lb breakfast sausage (hot if desired)
2 cups milk
8 medium eggs
1/4 tsp onion powder
1/4 tsp garlic powder
1 tsp salt
1/2 tsp pepper
Instructions
If baking the same day, preheat oven to 350°F.
In a large skillet, brown the sausage and drain excess fat.
In the same skillet, lightly brown the hash browns (work in batches if needed).
Spread hash browns evenly in a greased 9×13 baking dish.
Top with cooked sausage and shredded cheddar.
In a bowl, whisk eggs, milk, onion powder, garlic powder, salt, and pepper.
Pour egg mixture over the casserole.
Cover with foil and refrigerate overnight.
Bake uncovered at 350°F for about 40 minutes, or until the cheese is bubbly and the top is golden.
Notes
Add bell peppers, onions, or mushrooms for extra flavor.
Use turkey sausage for a lighter version.
