Ingredients

  • 2 cups shredded mild cheddar

  • 1 (30 oz) bag frozen shredded hash browns

  • 2 lb breakfast sausage (hot if desired)

  • 2 cups milk

  • 8 medium eggs

  • 1/4 tsp onion powder

  • 1/4 tsp garlic powder

  • 1 tsp salt

  • 1/2 tsp pepper


Instructions

  1. If baking the same day, preheat oven to 350°F.

  2. In a large skillet, brown the sausage and drain excess fat.

  3. In the same skillet, lightly brown the hash browns (work in batches if needed).

  4. Spread hash browns evenly in a greased 9×13 baking dish.

  5. Top with cooked sausage and shredded cheddar.

  6. In a bowl, whisk eggs, milk, onion powder, garlic powder, salt, and pepper.

  7. Pour egg mixture over the casserole.

  8. Cover with foil and refrigerate overnight.

  9. Bake uncovered at 350°F for about 40 minutes, or until the cheese is bubbly and the top is golden.

Notes

Add bell peppers, onions, or mushrooms for extra flavor.

Use turkey sausage for a lighter version.

Leftovers refrigerate well for up to 4 days and reheat beautifully.
