  • 1 cup butter, softened

  • 1/2 cup confectioners’ sugar

  • 1/2 teaspoon peppermint extract

  • 1 1/4 cups all-purpose flour

  • 1/2 cup cornstarch

  • 1/4 teaspoon salt

Frosting

  • 2 tablespoons butter, softened

  • 1 1/2 cups confectioners’ sugar

  • 2 tablespoons milk

  • 1/4 teaspoon peppermint extract

  • 23 drops red food coloring (optional)

  • Crushed peppermint candies for topping


Instructions

  1. In a large bowl, cream the butter and confectioners’ sugar until light and fluffy. Mix in the peppermint extract.

  2. In a separate bowl, whisk together flour, cornstarch, and salt. Gradually add the dry mixture to the butter mixture and stir until combined.

  3. Cover and chill the dough for at least 30 minutes.

  4. Preheat oven to 350°F (180°C).

  5. Shape dough into 1-inch balls and place them 2 inches apart on ungreased baking sheets.

  6. Bake for 9–11 minutes or until the bottoms are lightly golden. Cool completely on wire racks.

  7. For the frosting: beat butter until creamy, then add confectioners’ sugar, milk, peppermint extract, and food coloring until smooth.

  8. Frost cooled cookies and sprinkle with crushed peppermint candies. Let set before serving.

Notes

Chilling the dough helps the cookies keep their shape.

Add more milk to the frosting if it feels too thick.

These cookies freeze well (unfrosted). Frost after thawing.
