Ingredients
20 ounces frozen shredded hash brown potatoes
2 tablespoons butter, melted
1½–2 cups jalapeño pimento cheese
8 ounces sour cream
½ cup chicken broth
3–4 green onions, chopped
½ teaspoon salt
½ teaspoon coarse ground black pepper
½ cup shredded sharp cheddar cheese (optional topping)
Instructions
Preheat oven to 350°F and spray a 9×13-inch casserole dish with nonstick spray.
In a large bowl, toss the frozen hash browns with melted butter.
Add pimento cheese, sour cream, chicken broth, green onions, salt, and pepper. Mix until well combined.
Spread mixture evenly into the prepared casserole dish.
Sprinkle shredded cheddar cheese on top if using.
Bake for 35 minutes, or until bubbly and lightly golden around the edges.
Let rest for 5 minutes before serving.
Notes
Use mild pimento cheese for less heat.
Add cooked bacon or ham for a heartier casserole.
Leftovers reheat well in the oven or microwave.
