Ingredients
1 and 2/3 cups graham cracker crumbs
1/2 cup butter (1 stick), melted
2 tablespoons sugar
3 cups sweetened, flaked coconut
One 14 oz can sweetened condensed milk
1 cup seedless raspberry preserves
1/2 cup chopped pecans
1/2 cup semisweet chocolate chips
1/3 cup white baking chips
1 teaspoon shortening
Instructions
Crush 15 oz of shortbread cookies until sandy and blend with melted butter.
Press the mixture firmly into a lined baking pan.
Spread seedless raspberry preserves evenly over the crust.
Pour sweetened condensed milk over the raspberry layer and gently swirl.
Sprinkle coconut and chopped pecans on top, pressing lightly.
Add most of the chocolate chips and white baking chips on top.
Bake at 350°F (175°C) for 25–30 minutes, until the top is lightly golden.
Let the bars cool completely in the pan before slicing.
Notes
Refrigerate for firmer bars and cleaner slices.
Swap pecans for almonds, walnuts, or extra chocolate.
