Description

These Red Velvet Sugar Cookies are soft, vibrant, and easy to make—perfect for cut-out shapes, holidays, and cozy baking days with no chilling required.


Ingredients

  • 1 cup unsalted butter, softened

  • 4 ounces cream cheese, softened

  • 1 cup granulated sugar

  • 1 large egg yolk

  • 2 teaspoons vanilla extract

  • 1 tablespoon red food coloring

  • 3 cups all-purpose flour

  • 1/4 cup cornstarch

  • 1/4 cup unsweetened cocoa powder

  • 1/2 teaspoon kosher salt


Instructions

  1. Preheat the oven to 375°F and line baking sheets with parchment paper.

  2. In a large bowl, beat the butter, cream cheese, and sugar on medium-low speed until smooth.

  3. Add the egg yolk, vanilla extract, and red food coloring. Mix until fully combined.

  4. Scrape down the bowl, then add the flour, cocoa powder, cornstarch, and salt.

  5. Mix on medium-low speed until a stiff dough forms and pulls away from the sides of the bowl.

  6. Roll the dough to 3/16-inch thickness between two sheets of parchment paper.

  7. Cut out shapes using a 3-inch cookie cutter and transfer to prepared baking sheets.

  8. Bake for 12–16 minutes, until the edges are set but centers are still soft.

  9. Cool completely before decorating with royal icing.

Notes

If the dough feels sticky, mix in 1–2 tablespoons of flour.

Do not overbake—cookies will firm up as they cool.

Cookies can be baked ahead and decorated later.
