Description
Sautéed Mushrooms with Spinach is a quick, healthy, and delicious side dish made in under 15 minutes. Perfect for busy weeknights or a cozy dinner at home.
Ingredients
4 cups fresh spinach
2 cups fresh mushrooms, sliced (cremini or button)
2 tablespoons olive oil
2 cloves garlic, minced
Salt, to taste
Black pepper, to taste
Lemon juice, optional for garnish
Grated Parmesan cheese, optional for garnish
Instructions
Rinse and dry spinach thoroughly. Slice mushrooms evenly and mince garlic.
Heat olive oil in a large skillet over medium heat until shimmering.
Add garlic and sauté for 30 seconds until fragrant.
Toss in sliced mushrooms and cook 5–7 minutes until golden and tender.
Season with salt and black pepper.
Add spinach and sauté 2–3 minutes until wilted.
Mix well to coat with garlic and oil.
Finish with lemon juice or Parmesan if desired.
Serve warm and enjoy!
Notes
For meal prep, cook mushrooms and spinach separately to preserve texture.
Pine nuts or slivered almonds add a nice crunch.
Use dairy-free Parmesan or skip it to keep this recipe vegan.
