Description

This Savory Dill Pickle Chicken Salad is the perfect balance of creamy, tangy, and crunchy! Made with tender shredded chicken, crisp dill pickles, and a creamy dressing, it’s quick, easy, and versatile. Serve it on croissants, crackers, or atop a salad for a satisfying meal or snack. Ideal for busy days and meal prep!

Ingredients

  • 1 1/2 cups shredded cooked chicken

  • 2/3 cup diced dill pickles

  • 1/4 cup minced red onion

  • 1/4 cup plain Greek yogurt

  • 2 tablespoons mayo

  • 2 tablespoons sweet pickle relish

  • 1 tablespoon fresh parsley, chopped

  • 1 teaspoon Dijon mustard

  • 1 teaspoon dried chives

  • 1/2 teaspoon dried dill

  • To serve: Croissants, toast, or crackers (optional)

Instructions

  1. Prepare the Chicken and Veggies: In a large bowl, add your shredded cooked chicken (rotisserie chicken works great), diced pickles, and minced red onion. Set aside.

  2. Make the Dressing: In a separate bowl, whisk together Greek yogurt, mayo, sweet pickle relish, Dijon mustard, dried chives, dried dill, and a pinch of salt and pepper until smooth.

  3. Combine and Toss: Add the dressing to the chicken mixture and stir until everything is well-coated. Taste and adjust seasoning as needed.

  4. Serve and Enjoy: Serve your chicken salad on croissants for a sandwich, on crackers for a snack, or over a salad for a light lunch.

Notes

Make-Ahead: This chicken salad stores well in the fridge for up to 3 days. The flavors get even better as they meld together!
Customization: Add extra crunch with celery, or make it spicy by adding some chopped jalapeños or a pinch of cayenne pepper.
