Ingredients
1 1/2 cups shredded cooked chicken
2/3 cup diced dill pickles
1/4 cup minced red onion
1/4 cup plain Greek yogurt
2 tablespoons mayo
2 tablespoons sweet pickle relish
1 tablespoon fresh parsley, chopped
1 teaspoon Dijon mustard
1 teaspoon dried chives
1/2 teaspoon dried dill
To serve: Croissants, toast, or crackers (optional)
Instructions
Prepare the Chicken and Veggies: In a large bowl, add your shredded cooked chicken (rotisserie chicken works great), diced pickles, and minced red onion. Set aside.
Make the Dressing: In a separate bowl, whisk together Greek yogurt, mayo, sweet pickle relish, Dijon mustard, dried chives, dried dill, and a pinch of salt and pepper until smooth.
Combine and Toss: Add the dressing to the chicken mixture and stir until everything is well-coated. Taste and adjust seasoning as needed.
Serve and Enjoy: Serve your chicken salad on croissants for a sandwich, on crackers for a snack, or over a salad for a light lunch.
Notes
Make-Ahead: This chicken salad stores well in the fridge for up to 3 days. The flavors get even better as they meld together!
Customization: Add extra crunch with celery, or make it spicy by adding some chopped jalapeños or a pinch of cayenne pepper.
