These Slow Cooker Beef Gyros are juicy, flavorful, and effortless! Tender shredded beef is cooked with lemon, garlic, and oregano, then piled on warm pita bread with crisp veggies and creamy tzatziki for the ultimate Mediterranean-inspired dinner.
Ingredients
For the beef:
2 Tbsp. olive oil
1 red onion, sliced
3–4 lbs. beef chuck roast, cut into 2–3 inch chunks
4 cloves garlic, minced
2 lemons, juiced
1 tsp. dried oregano
1 tsp. salt
1/2 tsp. black pepper
For the gyros:
8 Greek-style pitas
Diced red onion
Diced tomatoes
Diced cucumber
Shredded lettuce
Tzatziki sauce
Instructions
Drizzle olive oil into the bottom of the slow cooker and layer in sliced red onions.
Arrange chuck roast chunks over the onions.
Sprinkle minced garlic, lemon juice, oregano, salt, and pepper over the beef.
Cover and cook on low for 8 hours.
Shred beef with two forks.
Warm pita breads if desired, then fill with beef and your favorite toppings.
Notes
Use chuck roast for the juiciest results, but brisket or stew meat can also work.
Leftovers store well in the fridge for up to 4 days or can be frozen for up to 3 months.
Toasting or charring the pita slightly adds extra flavor.
