Ingredients
Scale
- 6 cups peeled and diced potatoes
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 celery stalks, diced
- 1 teaspoon smoked paprika
- 1 teaspoon Cajun seasoning, more to taste
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
- 4 cups chicken broth or vegetable broth
- 1 cup heavy cream or half-and-half
- 1 tablespoon butter
- 1/2 cup shredded cheddar cheese, optional
- 1/4 cup chopped green onions, for garnish
- 1/4 teaspoon cayenne pepper, optional
Instructions
- Add the diced potatoes, onion, garlic, bell pepper, celery, smoked paprika, Cajun seasoning, thyme, salt, pepper, and broth to the slow cooker.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the potatoes are tender.
- Use a potato masher or immersion blender to mash some of the potatoes for a thicker texture, leaving some chunks for a hearty soup.
- Stir in the heavy cream, butter, and cayenne pepper if using.
- Cook on high for 15 to 20 minutes more, until heated through.
- Taste and adjust seasoning as needed.
- Serve hot, topped with shredded cheddar cheese and chopped green onions.
Notes
- Use Russet potatoes for a softer, creamier texture or Yukon Gold potatoes for a richer, buttery flavor.
- For a chunkier soup, mash only a portion of the potatoes.
- For a smoother soup, use an immersion blender carefully and blend a little more.
- Add extra Cajun seasoning or cayenne if you want more heat.
- To make it vegetarian, use vegetable broth and skip any meat toppings.
- This soup stores well in the fridge for up to 5 days.
- Freeze before adding the cream for the best texture after reheating.
