  • 1/4 cup chopped green onions, for garnish
  • 1/4 teaspoon cayenne pepper, optional

Instructions

  1. Add the diced potatoes, onion, garlic, bell pepper, celery, smoked paprika, Cajun seasoning, thyme, salt, pepper, and broth to the slow cooker.
  2. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the potatoes are tender.
  3. Use a potato masher or immersion blender to mash some of the potatoes for a thicker texture, leaving some chunks for a hearty soup.
  4. Stir in the heavy cream, butter, and cayenne pepper if using.
  5. Cook on high for 15 to 20 minutes more, until heated through.
