  • 1 small onion, chopped

  • 3 cloves garlic, minced

  • 1 bell pepper, chopped (any color)

  • 2 celery stalks, diced

  • 1 teaspoon smoked paprika

  • 1 teaspoon Cajun seasoning (more to taste)

  • ½ teaspoon dried thyme

  • Salt and pepper to taste

  • 4 cups chicken or vegetable broth

  • 1 cup heavy cream or half-and-half

  • 1 tablespoon butter

  • ½ cup shredded cheddar cheese (optional)

  • ¼ cup chopped green onions (for garnish)

  • ¼ teaspoon cayenne pepper (optional, for heat)


Instructions

  1. Add ingredients: Place the diced potatoes, onion, garlic, bell pepper, celery, paprika, Cajun seasoning, thyme, salt, pepper, and broth into your slow cooker. Stir well.

  2. Cook: Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the potatoes are soft.

  3. Thicken: Use a potato masher or immersion blender to mash part of the soup for a thicker texture, leaving some chunks for heartiness.

  4. Finish: Stir in the heavy cream, butter, and cayenne pepper (if using). Cook on High for another 15–20 minutes until heated through.

  5. Serve: Taste and adjust seasonings. Serve hot with cheddar cheese and green onions on top.

Notes

For a lighter version, substitute half-and-half or evaporated milk for heavy cream.
Add cooked sausage or shrimp for extra protein and Cajun flair.
Store leftovers in an airtight container in the fridge for up to 4 days.
