Slow Cooker Chicken Gyros made with tender lemon-garlic shredded chicken, creamy homemade tzatziki, and crisp fresh veggies tucked into warm pita. This easy, hands-off recipe is perfect for busy weeknights and meal prep.

For the Gyro Chicken
- 1 pound boneless, skinless chicken breasts (or chicken thighs)
- 3 cloves garlic, minced
- ¼ cup fresh lemon juice
- 1 onion, diced
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- ¼ cup water
- 1 teaspoon dried oregano
- ¼ teaspoon allspice
- 1 teaspoon lemon pepper
For the Tzatziki Sauce
- 1 cup plain Greek yogurt (fat-free or full-fat)
- 2 cloves garlic, minced
- 1 cup grated cucumber (squeezed dry)
- 1–2 tablespoons chopped fresh parsley
- Salt, to taste
For Serving
- Pocketless pita bread
- Sliced tomatoes
- Sliced red onions
- Sliced cucumbers
- Lettuce
Instructions
- Spray the inside of your slow cooker with nonstick cooking spray. Place the chicken in the bottom.
- In a bowl, whisk together garlic, lemon juice, diced onion, red wine vinegar, olive oil, water, oregano, allspice, and lemon pepper.
- Pour the marinade over the chicken. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until tender.
- While the chicken cooks, prepare the tzatziki. Mix Greek yogurt, garlic, grated cucumber, parsley, and salt in a bowl. Cover and refrigerate for at least 1 hour.
- Once the chicken is done, shred it directly in the slow cooker using two forks. Let it soak in the juices.
- Warm the pita bread. Fill with shredded chicken, tomatoes, cucumbers, red onion, lettuce, and a generous spoonful of tzatziki. Serve immediately.
Notes
- Chicken thighs will give you extra juicy, flavorful gyros.
- Squeeze excess water from the cucumber for thick tzatziki.
- Store leftover chicken in its juices for up to 4 days in the refrigerator.
- The shredded chicken freezes well for up to 3 months.
- Serve leftovers in bowls, wraps, or over rice for easy meal prep.
