Description

Slow Cooker Chicken Gyros made with tender lemon-garlic shredded chicken, creamy homemade tzatziki, and crisp fresh veggies tucked into warm pita. This easy, hands-off recipe is perfect for busy weeknights and meal prep.

For the Gyro Chicken

  • 1 pound boneless, skinless chicken breasts (or chicken thighs)
  • 3 cloves garlic, minced
  • ¼ cup fresh lemon juice
  • 1 onion, diced
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • ¼ cup water
  • 1 teaspoon dried oregano
  • ¼ teaspoon allspice
  • 1 teaspoon lemon pepper

For the Tzatziki Sauce

  • 1 cup plain Greek yogurt (fat-free or full-fat)
  • 2 cloves garlic, minced
  • 1 cup grated cucumber (squeezed dry)
  • 12 tablespoons chopped fresh parsley
  • Salt, to taste

For Serving

  • Pocketless pita bread
  • Sliced tomatoes
  • Sliced red onions
  • Sliced cucumbers
  • Lettuce

Instructions

  1. Spray the inside of your slow cooker with nonstick cooking spray. Place the chicken in the bottom.
  2. In a bowl, whisk together garlic, lemon juice, diced onion, red wine vinegar, olive oil, water, oregano, allspice, and lemon pepper.
  3. Pour the marinade over the chicken. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until tender.
  4. While the chicken cooks, prepare the tzatziki. Mix Greek yogurt, garlic, grated cucumber, parsley, and salt in a bowl. Cover and refrigerate for at least 1 hour.
  5. Once the chicken is done, shred it directly in the slow cooker using two forks. Let it soak in the juices.
  6. Warm the pita bread. Fill with shredded chicken, tomatoes, cucumbers, red onion, lettuce, and a generous spoonful of tzatziki. Serve immediately.

Notes

  • Chicken thighs will give you extra juicy, flavorful gyros.
  • Squeeze excess water from the cucumber for thick tzatziki.
  • Store leftover chicken in its juices for up to 4 days in the refrigerator.
  • The shredded chicken freezes well for up to 3 months.
  • Serve leftovers in bowls, wraps, or over rice for easy meal prep.
