Description

Slow Cooker Chicken Jambalaya is a cozy, flavor-packed one-pot meal made with tender chicken, smoky sausage, vegetables, and seasoned rice. It’s an easy, hands-off dinner perfect for busy days.


Ingredients

  • 1 ½ lbs chicken breasts, diced into 1-inch pieces

  • 1 lb andouille sausage links, sliced

  • 1 tablespoon Cajun seasoning

  • ½ onion, diced

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 2 stalks celery, sliced

  • 2 teaspoons minced garlic

  • 1 can crushed tomatoes, 14.5 oz

  • 2 teaspoons dried oregano

  • 1 cup chicken broth

  • 3 cups cooked rice


Instructions

  1. Add all ingredients except the cooked rice to the slow cooker.

  2. Stir gently to combine and evenly coat everything with seasoning.

  3. Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the chicken is fully cooked.

  4. Stir in the cooked rice just before serving.

  5. Serve warm and enjoy.

Notes

Add rice at the end to prevent it from becoming mushy.

Adjust spice level by using mild or spicy Cajun seasoning.

Leftovers store well and taste even better the next day.
