Ingredients
4 boneless, skinless chicken breasts
1 cup fig jam
4 oz goat cheese, crumbled
1/4 cup balsamic vinegar
3 cloves garlic, minced
1 teaspoon dried thyme or 1 tablespoon fresh thyme
2 tablespoons olive oil
Salt, to taste
Black pepper, to taste
Instructions
Season the chicken breasts on both sides with salt and pepper.
Heat olive oil in a small skillet over medium heat and sauté the garlic for 1–2 minutes until fragrant.
Place the chicken breasts in the slow cooker. Pour the garlic and oil over the chicken.
Add the balsamic vinegar, spoon the fig jam over the top, and sprinkle with thyme.
Cover and cook on low for 4–6 hours, until the chicken is tender and cooked through.
About 15 minutes before serving, sprinkle the goat cheese over the chicken and cover until melted.
Serve warm with extra sauce spooned over the top.
Notes
Chicken thighs can be used instead of breasts for extra juiciness.
If the sauce is too thick, add a splash of chicken broth before serving.
Leftovers store well in the refrigerator for up to 3 days.
