Description

Slow Cooker Cowboy Potato Casserole is a hearty, family-friendly comfort food made with seasoned ground beef, tender potatoes, corn, Rotel, and plenty of melted cheddar cheese—all cooked low and slow for maximum flavor with minimal effort.


Ingredients

  • 1.5 pounds ground beef

  • 1 large yellow onion, chopped

  • 2 cloves garlic, minced

  • 2 pounds frozen diced potatoes

  • 1 can (15 oz) whole kernel corn, drained

  • 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained

  • 1 can (10.75 oz) condensed cream of mushroom soup

  • 1/2 cup beef broth or milk

  • 1 teaspoon paprika

  • 1 teaspoon dried parsley flakes (optional)

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon salt, or to taste

  • 2 cups shredded sharp cheddar cheese, divided

  • Optional: crispy fried onions or cooked crumbled bacon for topping


Instructions

  1. Brown the ground beef in a skillet over medium-high heat, breaking it apart as it cooks.

  2. Add the chopped onion and cook until softened, about 5–7 minutes. Stir in garlic for the last minute. Drain excess grease.

  3. Transfer the beef mixture to a 6-quart slow cooker.

  4. Add frozen diced potatoes, corn, and Rotel tomatoes.

  5. In a bowl, whisk together cream of mushroom soup and beef broth (or milk). Pour over the mixture.

  6. Sprinkle in all seasonings and gently stir until well combined.

  7. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until potatoes are tender.

  8. Sprinkle 1 1/2 cups cheese over the top during the last 30 minutes of cooking.

  9. Garnish with remaining cheese or optional toppings before serving.

Notes

This recipe is easy to customize—add bell peppers, green beans, or black beans for variety. Leftovers store well in the refrigerator for up to 4 days and reheat beautifully.
