These Slow Cooker Cowboy Sandwiches are loaded with tender shredded beef, smoky bacon, spicy jalapeños, melty cheese, and crispy fried onions—all piled high on a soft bun. The slow cooker does all the hard work, making this a hearty and easy comfort food your family will love.
Ingredients
1 chuck roast
1 cup BBQ sauce
8 slices bacon, cooked and crumbled (divided)
1 onion, sliced
2 tablespoons Worcestershire sauce
3 garlic cloves, minced
2 tablespoons brown sugar
1 can diced jalapeños (divided)
Colby Jack cheese slices
Crispy fried onions

Instructions
Add to Slow Cooker: Place chuck roast, BBQ sauce, half the bacon, onion, Worcestershire sauce, garlic, brown sugar, and half the jalapeños into the slow cooker.
Cook: Cover and cook on low for 6–8 hours or high for 4–6 hours, until beef is fork-tender.
Shred Beef: Drain most of the liquid, reserving about 1 cup. Shred beef using two forks and stir back into juices.
Assemble Sandwiches: Layer cheese on bottom buns, top with shredded beef, remaining bacon, jalapeños, and crispy fried onions. Cap with top bun and serve warm.
Notes
Spice it up by swapping Colby Jack for Pepper Jack cheese.
Keep leftovers juicy by storing with a little reserved cooking liquid.
Serve with chips, coleslaw, or baked beans for a complete meal.
