Slow Cooker Creamy Tomato Basil Chicken is a cozy, hands-off dinner made with tender chicken simmered in a rich tomato basil cream sauce. Perfect for busy weeknights and comfort cravings.
Ingredients
1 can diced tomatoes with Italian herbs, with juice, 14 oz
1 cup marinara sauce
3 cloves garlic, finely minced
1 teaspoon salt
1 teaspoon Italian seasoning
½ teaspoon dried basil
¼ teaspoon black pepper
½ cup heavy whipping cream
2 tablespoons cornstarch
4 boneless skinless chicken breasts, about 2 pounds
2 tablespoons fresh basil, finely chopped
Grated Parmesan cheese, for serving
Instructions
Add diced tomatoes, marinara sauce, garlic, salt, Italian seasoning, dried basil, and pepper to a 4–6 quart slow cooker and stir well.
In a small bowl, whisk together heavy cream and cornstarch until smooth, then stir into the slow cooker.
Add chicken breasts and press them gently into the sauce to coat.
Cover and cook on low for 3 to 4 hours, until the chicken reaches 165°F internally.
Stir in fresh basil, taste, and adjust seasoning if needed.
Serve warm with grated Parmesan cheese.
Notes
Chicken thighs may be substituted for breasts.
Sauce thickens slightly as it rests.
Delicious served over pasta, rice, or mashed potatoes.
