Description

Juicy, tender beef slow-cooked to perfection, piled onto crusty rolls, topped with melty cheese, and dipped into savory au jus — these Slow Cooker French Dip Sandwiches are the ultimate comfort food with minimal effort.

  • 2 lbs beef chuck roast

  • 1 tablespoon olive oil

  • 1 large onion, sliced

  • 4 cloves garlic, minced

  • 1 cup beef broth

  • 1 cup dry red wine (such as Cabernet Sauvignon)

  • 1 tablespoon Worcestershire sauce

  • 1 tablespoon soy sauce

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • Salt and pepper, to taste

  • 46 hoagie rolls or French baguette

  • Sliced provolone or Swiss cheese (optional)

  • Fresh basil or parsley, for garnish (optional)


Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the chuck roast with salt and pepper, then sear on all sides until browned (about 4–5 minutes per side).

  2. Place sliced onions and minced garlic in the bottom of the slow cooker. Add the seared beef on top.

  3. In a bowl, whisk together beef broth, red wine, Worcestershire sauce, soy sauce, thyme, and rosemary. Pour over the beef.

  4. Cook on low for 8–10 hours or high for 5–6 hours, until beef is fork-tender.

  5. Remove beef, shred with two forks, discard excess fat, and return meat to the slow cooker juices.

  6. About 30 minutes before serving, preheat oven to 350°F. Slice rolls, add cheese, and bake until melty and golden (10–15 minutes).

  7. Pile shredded beef and onions onto rolls. Serve with a side of au jus for dipping. Garnish with fresh herbs if desired.

Notes

Swap red wine for extra beef broth if you prefer alcohol-free.
Hoagie rolls or French baguettes work best since they hold up to dipping.
Make ahead: Beef can be cooked, shredded, and stored in the fridge up to 3 days before serving.
