Slow Cooker Garlic Butter Beef Bites and Potatoes is a cozy, hands-off dinner made with tender beef, buttery potatoes, and rich garlic flavor—perfect for busy weeknights or relaxed weekends.


Ingredients

  • 1 ½ pounds beef stew meat, cut into bite-sized pieces

  • 1 pound baby potatoes, halved

  • 4 tablespoons unsalted butter, melted

  • 3 cloves garlic, minced

  • 1 teaspoon onion powder

  • 1 teaspoon smoked paprika

  • ½ teaspoon dried thyme

  • ½ teaspoon dried rosemary

  • ½ teaspoon salt, or to taste

  • ¼ teaspoon black pepper

  • ¼ cup beef broth

  • 1 tablespoon olive oil

  • Fresh parsley, optional for garnish


Instructions

  1. Heat the olive oil in a skillet over medium-high heat. Sear the beef bites for 2–3 minutes per side until browned. Transfer to the slow cooker.

  2. Add the halved baby potatoes on top of the beef.

  3. In a small bowl, mix melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.

  4. Pour the garlic butter mixture evenly over the beef and potatoes.

  5. Add the beef broth. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the beef is tender and potatoes are cooked through.

  6. Gently stir before serving and garnish with fresh parsley if desired.

Notes

Browning the beef adds extra flavor but can be skipped if you’re short on time.

For a thicker sauce, remove the lid during the last 20–30 minutes of cooking.

Leftovers store well in the fridge for up to 3 days.
