Slow Cooker Garlic Butter Beef with Potatoes is a cozy, hands-off dinner made with tender chuck roast, buttery garlic sauce, and baby potatoes cooked until perfectly soft and flavorful.
Ingredients
2.5 lbs beef chuck roast, cut into large chunks
Salt and black pepper, to taste
2 tablespoons olive oil (optional, for searing)
6 tablespoons unsalted butter, melted
5 cloves garlic, minced
1 teaspoon dried Italian herbs
½ teaspoon crushed red pepper flakes (optional)
¼ cup fresh parsley, chopped
2 lbs baby Yukon Gold potatoes, halved
½ cup low-sodium beef broth
1 medium onion, sliced (optional)
1 cup carrots, chopped (optional)
Instructions
Pat beef dry and season generously with salt and black pepper.
Optional step: Sear beef in olive oil over medium-high heat until browned on all sides.
Add potatoes to the bottom of the slow cooker and place beef on top. Add onion and carrots if using.
In a bowl, mix melted butter, garlic, Italian herbs, red pepper flakes, and parsley.
Pour beef broth over contents, then drizzle garlic butter mixture evenly on top.
Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until beef is fork-tender.
Adjust seasoning and serve warm with extra sauce spooned over the top.
Notes
Chuck roast gives the best tender results.
Skip searing if short on time—the recipe still works beautifully.
Mash a few potatoes into the sauce if you prefer a thicker texture.
