This Slow Cooker Hoisin Chicken Recipe is a cozy, hands-off dinner made with tender chicken thighs simmered in a savory-sweet hoisin sauce. Perfect for busy weeknights, meal prep, or family dinners.
Ingredients
1/3 cup low-sodium soy sauce
1/3 cup hoisin sauce
1/3 cup low-sodium chicken broth
2 tablespoons honey or agave nectar
2 tablespoons minced ginger
1/2 teaspoon chili-garlic sauce, or to taste
2 1/4 pounds boneless skinless chicken thighs, trimmed
1 tablespoon cornstarch
2 tablespoons water
Sliced green onions for garnish
Instructions
In a medium bowl, whisk together soy sauce, hoisin sauce, chicken broth, honey, ginger, and chili-garlic sauce.
Place chicken thighs in the slow cooker and pour sauce over the top.
Cook on HIGH for 1 1/2 to 2 hours or LOW for 4 hours, until fully cooked.
Remove chicken and shred using two forks.
Pour cooking liquid into a saucepan. Whisk cornstarch and water together, then add to the sauce.
Bring to a boil and cook until thickened, about 4 to 5 minutes.
Return shredded chicken to the slow cooker or a bowl and toss with 3/4 cup of sauce.
Garnish with green onions and serve warm.
Notes
Chicken thighs stay juicier than breasts and shred more easily.
Adjust chili-garlic sauce for spice preference.
Leftover sauce is great over rice or vegetables.
