Description
This Slow Cooker Hoisin Chicken is sweet, savory, and fall-apart tender. With bold flavors from hoisin, soy, ginger, and honey, it’s the perfect set-it-and-forget-it meal for busy nights.
Ingredients
1/3 cup low-sodium soy sauce
1/3 cup hoisin sauce
1/3 cup low-sodium chicken broth
2 tablespoons honey or agave nectar
2 tablespoons minced ginger
1/2 teaspoon chili-garlic sauce (or to taste)
2 1/4 pounds boneless skinless chicken thighs, trimmed of fat
1 tablespoon cornstarch
2 tablespoons water
Sliced green onions, for garnish
Instructions
In a medium bowl, whisk together soy sauce, hoisin sauce, chicken broth, honey (or agave), ginger, and chili-garlic sauce.
Place chicken thighs in the slow cooker and pour sauce over top.
Cover and cook on HIGH for 1.5–2 hours or LOW for 4 hours.
Remove chicken, let cool slightly, and shred with two forks or hands.
Transfer sauce to a saucepan. Mix cornstarch and water in a small bowl, then stir into the sauce.
Bring to a boil over medium heat, whisking until slightly thickened, about 4–5 minutes.
Return shredded chicken to slow cooker or bowl and toss with about 3/4 cup sauce.
Serve over rice or noodles and garnish with green onions.
Notes
You can use chicken breasts instead, but reduce cook time slightly to avoid drying out.
Add sautéed bell peppers or snap peas in the last 30 minutes for extra veggies.
The extra sauce is great for drizzling over rice or roasted veggies!
