Korean Beef Noodles are a cozy slow cooker dinner made with tender beef, savory-sweet sauce, and slurp-worthy noodles. Comfort food made easy for busy nights.
Ingredients
2 pounds beef chuck, cut into 1-inch pieces
4 cups beef broth
2 cups water
1 cup soy sauce
1/4 cup brown sugar
2 tablespoons fresh ginger, minced
4 cloves garlic, minced
1 tablespoon sesame oil
1 teaspoon black pepper
1 tablespoon gochujang Korean chili paste
1 pound fresh or dried noodles (udon or ramen)
3 green onions, sliced (for garnish)
Sesame seeds, optional
Fresh cilantro, optional
Instructions
Season the beef chunks evenly with black pepper.
In a bowl, whisk together beef broth, water, soy sauce, brown sugar, ginger, garlic, sesame oil, and gochujang until well combined.
Add the seasoned beef to the slow cooker and pour the sauce over the top.
Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the beef is fork-tender.
About 15–20 minutes before serving, cook the noodles according to package instructions and drain.
Stir the cooked noodles into the slow cooker, gently mixing to coat them in the sauce.
Serve hot, garnished with green onions, sesame seeds, and cilantro if desired.
Notes
For less sodium, use low-sodium soy sauce.
Adjust the gochujang for more or less heat.
Leftovers reheat best with a splash of broth.
