Ingredients
2 pounds baby potatoes or Yukon Gold potatoes
1 packet Lipton onion soup mix
1 cup beef broth or chicken broth
¼ cup unsalted butter, cut into small pieces
Salt and pepper to taste
Fresh parsley, for garnish (optional)
Instructions
Wash the potatoes thoroughly. Peel if desired, but leaving the skins on adds texture and nutrients.
Place the potatoes evenly in the bottom of your slow cooker.
Sprinkle the Lipton onion soup mix evenly over the potatoes.
Pour in the broth (beef or chicken) for moisture and flavor.
Dot the top with butter pieces.
Season with salt and pepper to taste.
Cover and cook:
Low for 6–8 hours, OR
High for 3–4 hours.
Check for tenderness (potatoes should be fork-tender).
Garnish with fresh parsley before serving.

Swap butter for olive oil if you prefer a lighter option.
For a crispy finish, place cooked potatoes under the broiler for a few minutes.
