Ingredients
-
2 pounds baby carrots (or 1½ pounds whole carrots, peeled and sliced)
-
¼ cup packed brown sugar
-
¼ cup maple syrup
-
⅓ cup butter, cubed
-
1 teaspoon salt
-
½ teaspoon ground cinnamon
-
⅛ teaspoon pepper
-
Fresh thyme for garnish (optional)
Instructions
-
Add carrots to a 5–6 quart slow cooker.
-
In the slow cooker, mix together brown sugar, salt, cinnamon, and pepper. Stir to coat the carrots.
-
Pour maple syrup over the carrots and toss gently.
-
Top with cubed butter.
-
Cover and cook on HIGH for 3 hours or LOW for 5–6 hours, until carrots are tender. Stir once or twice if possible.
-
To thicken glaze, uncover for the last 30 minutes of cooking, or transfer glaze to a saucepan and simmer 5 minutes until thickened.
-
Garnish with fresh thyme and serve warm.
Notes
To save time, use baby carrots—they’re pre-peeled and cook evenly.
Substitute maple syrup with honey or agave if needed.
Add herbs like thyme or rosemary for a fragrant twist.
Great for Thanksgiving or as a cozy weeknight side.
