Slow Cooker Parmesan Garlic Chicken and Potatoes is the ultimate cozy dinner. Juicy chicken, golden potatoes, and creamy garlic parmesan sauce come together effortlessly in the slow cooker—perfect for busy weeknights or laid-back weekends.


Ingredients

  • 1 lb chicken breast

  • 5 medium-sized potatoes, scrubbed and chopped into even cubes

  • 2 TBSP olive oil

  • Salt, pepper, garlic powder, and smoked paprika (for potatoes; to taste)

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tsp Italian seasoning

  • 2 TBSP minced garlic

  • Buffalo Wild Wings Garlic Parmesan Sauce (or your favorite brand; enough to coat chicken)

  • 1 cup shredded mozzarella cheese

  • Non-stick cooking spray


Instructions

  1. Spray your slow cooker with non-stick cooking spray.

  2. Dice the potatoes into small, even cubes.

  3. Toss potatoes with olive oil, salt, pepper, garlic powder, and smoked paprika. Stir in minced garlic.

  4. Cube the chicken (or leave whole) and place on top of the potatoes.

  5. Season chicken with salt, pepper, onion powder, paprika, and Italian seasoning.

  6. Drizzle garlic parmesan sauce over the chicken to coat.

  7. Cook on low for 6 hours, until chicken reaches 165°F and potatoes are tender.

  8. Stir everything gently, then top with shredded mozzarella.

  9. Let sit with the lid on for 10–15 minutes, until cheese is melted and gooey.

Notes

For extra heat, add a pinch of red pepper flakes or hot sauce with the chicken seasoning.
You can substitute chicken thighs for a juicier result.
Add a splash of broth or milk if the sauce thickens too much during cooking.
