Slow Cooker Peanut Chicken is an easy, hands-off dinner made with tender chicken breasts simmered in a creamy, Thai-inspired peanut sauce. With just 5 minutes of prep, this comforting, protein-packed meal is perfect for busy weeknights and cozy family dinners.
Ingredients
For the Chicken
1.5 lb chicken breasts
1 red bell pepper, diced
1/2 large yellow onion, diced
2 garlic cloves, chopped
For the Sauce
1/2 cup creamy peanut butter
1/2 cup chicken broth
1/4 cup soy sauce
1 tbsp honey
1 tsp sesame oil
1 tsp chili garlic paste
1 tbsp lime juice
2 tbsp fresh cilantro, chopped
Instructions
- Add the diced bell pepper, onion, and garlic to the bottom of the slow cooker.
- Place the chicken breasts on top of the vegetables.
- In a bowl or glass measuring cup, whisk together the peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until smooth.
- Pour the sauce evenly over the chicken.
- Cover and cook on HIGH for 2–3 hours or on LOW for 4–5 hours, until the chicken is tender.
- Remove the lid and stir in the lime juice and chopped cilantro.
- Serve warm over rice, noodles, or vegetables.
Notes
