Tender, savory, and full of flavor, this Slow Cooker Pepper Steak is an effortless dinner win. Made with beef sirloin, colorful bell peppers, and a rich homemade sauce, it’s a family favorite that practically cooks itself.
Ingredients
2 lbs beef sirloin strips or sirloin steak, sliced
3 large colorful bell peppers, thickly sliced
1 large onion, sliced
3 garlic cloves, minced
¾ cup beef broth (hot)
3 beef bouillon cubes
¼ cup soy sauce
2 teaspoons Worcestershire sauce
2 tablespoons honey
1 teaspoon ground ginger
½ teaspoon black pepper
½ teaspoon salt
2 tablespoons cornstarch or flour
Instructions
In a mixing bowl, whisk together hot beef broth, bouillon cubes, soy sauce, Worcestershire sauce, honey, ground ginger, black pepper, salt, and cornstarch or flour. Stir until smooth.
Place beef slices in the bottom of the slow cooker.
Pour the sauce mixture over the beef.
Layer sliced bell peppers, onions, and minced garlic on top.
Cover and cook on LOW for 6 hours or HIGH for 3 hours. Stir halfway if possible.
Stir well before serving. Serve over rice, noodles, mashed potatoes, or your favorite side.
Notes
Use red, yellow, and green bell peppers for the best color and flavor.
Add red pepper flakes for a spicy kick.
This dish freezes well—perfect for meal prep.
Flank steak or stew meat can be used as substitutes for sirloin.
