Description
Comforting, savory, and slurpable, this Slow Cooker Ramen Noodles with Ground Beef recipe combines lean ground beef, tender vegetables, and a simple umami-rich sauce for an easy, cozy dinner that practically cooks itself.
Ingredients
1 pound lean ground beef
9 ounces slaw mix (about 4 cups)
2 cups shredded carrots
3 garlic cloves, minced
⅓ cup low-sodium tamari or soy sauce
2 cups chicken stock
1 teaspoon brown sugar
Add at the End:
2 (3-ounce) packages ramen noodles (seasoning packets discarded)
Instructions
Heat a large skillet over medium-high heat. Add the ground beef, breaking it into small pieces, and cook until browned and no longer pink, about 5 minutes.
Transfer the cooked ground beef to a 6-quart slow cooker. Add the slaw mix, shredded carrots, garlic, tamari, chicken stock, and brown sugar. Stir to combine.
Cover and cook on HIGH for 2–3 hours or LOW for 4–6 hours, until the vegetables are tender and the sauce is bubbling. Do not uncover during cooking.
Turn the slow cooker to HIGH if not already. Add the ramen noodles, stirring to submerge them in the sauce.
Cook for 5–15 minutes, until the noodles are just tender. Serve immediately.
Notes
Serve with sliced green onions, sesame seeds, sriracha, or chili crisp for extra flavor.
For a gluten-free option, use gluten-free ramen noodles and gluten-free tamari.
Watch the noodles closely after adding—they cook quickly and are best served right away.
