Ingredients
For the Casserole
1 ½ lbs steak (sirloin or ribeye), cubed into bite-sized pieces
4 large potatoes (Russet or Yukon Gold), thinly sliced
2 cups cheddar cheese (sharp, freshly grated for optimal melting)
1 cup heavy cream
1 cup beef broth
1 medium onion, finely diced
2 cloves garlic, minced
2 tbsp butter
For Seasonings and Garnish
1 tsp smoked paprika
½ tsp black pepper
1 tsp salt (adjust to taste)
Fresh parsley or green onions (optional, for garnish)
Instructions
Sear the Steak: In a skillet over medium-high heat, melt the butter. Add cubed steak, season with salt, pepper, and smoked paprika. Sear until browned on all sides. Remove from heat and set aside.
Layer Ingredients: In your slow cooker, layer half the potatoes on the bottom. Top with half the diced onions and minced garlic. Add seared steak in an even layer. Layer remaining potatoes, onions, and garlic on top.
Add Liquids: Pour beef broth and heavy cream evenly over all layers. Sprinkle extra salt and pepper if desired.
Add Cheese: Top the casserole with freshly grated cheddar cheese.
Cook: Cover the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender and cheese is melted.
Serve: Garnish with fresh parsley or green onions if desired. Serve hot and enjoy!

Freshly grated cheddar melts better than pre-shredded for a smooth, cheesy sauce.
Ribeye makes for a richer casserole, but sirloin is a great leaner alternative.
