Description

Slow Cooker Street Corn Chicken is a creamy, comforting dinner made with tender chicken, sweet corn, cream cheese, and bold street corn flavors. Easy, cozy, and perfect for busy nights.


Ingredients

  • 1 lb boneless chicken breasts or thighs

  • 2 cups corn, fresh, frozen, or canned

  • 4 oz cream cheese

  • 1/3 cup cotija cheese

  • Juice of 1 lime

  • 2 cloves garlic, minced

  • 1/2 tsp chili powder

  • 1/2 tsp smoked paprika

  • 1/2 tsp onion powder

  • Fresh cilantro, optional garnish


Instructions

  1. Place the chicken in the bottom of the slow cooker.

  2. Layer the corn, cream cheese, cotija cheese, lime juice, garlic, chili powder, smoked paprika, and onion powder on top. Do not stir.

  3. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken is tender.

  4. Shred the chicken directly in the slow cooker using two forks.

  5. Stir everything together until creamy. Adjust consistency with broth or milk if needed.

  6. Serve warm, topped with fresh cilantro if desired.

Notes

Avoid stirring before cooking so the cream cheese melts smoothly.

Frozen chicken can be used; add about 1 extra hour on LOW.

Add broth or milk to thin the sauce if needed.
