This Slow Cooker Sweet Chili Chicken is sweet, tangy, and a little garlicky—perfect for busy weeknights. Tender chicken slow-cooked with peppers, onions, and a glossy chili sauce makes this an easy, family-friendly dinner you’ll want on repeat.
Ingredients
2 lbs boneless, skinless chicken thighs or breasts
1 cup sweet chili sauce
¼ cup low-sodium soy sauce
2 tbsp rice vinegar
2 tbsp honey
3 cloves garlic, minced
1 tbsp fresh grated ginger
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, sliced
2 tbsp cornstarch
2 tbsp water
Chopped green onions, for garnish
Sesame seeds, for garnish
Steamed rice, for serving
Instructions
Place chicken thighs or breasts in the bottom of the slow cooker.
In a bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, honey, garlic, and ginger.
Add sliced bell peppers and onion over the chicken.
Pour the sauce over everything, coating well.
Cover and cook on Low 6–7 hours or High 3–4 hours, until chicken is tender.
About 30 minutes before serving, whisk cornstarch and water to make a slurry. Stir into the slow cooker, cover, and cook until sauce thickens.
Serve over rice, garnished with green onions and sesame seeds.
Notes
Chicken thighs stay juicier than breasts, but both work well.
Add broccoli or snap peas in the last 30 minutes for extra veggies.
Leftovers reheat beautifully and can be frozen up to 3 months.
