Description

This Slow Cooker Taco Casserole is a cheesy, layered comfort food loaded with seasoned beef, beans, corn, salsa, and tortillas. Perfect for busy weeknights, it’s an easy set-it-and-forget-it dinner the whole family will love.

  • 1 lb (450g) ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 packet (1 oz) taco seasoning mix

  • 1 can (14.5 oz) diced tomatoes with green chilies (Rotel)

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) corn, drained

  • 1 cup salsa

  • 1 cup shredded Mexican cheese blend

  • 6 small flour or corn tortillas, cut into strips

  • Fresh cilantro, chopped (for garnish)

  • Sour cream (for serving)

  • Sliced jalapeños (optional, for serving)

  • Diced avocado (optional, for serving)


Instructions

  1. Brown the Ground Beef: In a large skillet over medium-high heat, cook the ground beef until browned. Drain excess fat.

  2. Sauté Onions and Garlic: Add onion to the skillet and cook until softened, about 3–4 minutes. Stir in garlic and cook for 1 minute.

  3. Add Seasoning and Tomatoes: Stir in taco seasoning and cook for 1 minute. Add diced tomatoes with green chilies (including juices) and combine. Remove from heat.

  4. Layer in the Slow Cooker: Spray slow cooker with non-stick spray. Spread a thin layer of salsa on the bottom. Add tortilla strips, half the beef mixture, half the beans, and half the corn. Repeat layers, ending with tortilla strips and remaining salsa.

  5. Cook: Cover and cook on low for 4–5 hours or high for 2–3 hours.

  6. Add Cheese: About 15 minutes before serving, sprinkle cheese over the top, cover, and let melt.

  7. Serve: Garnish with cilantro and serve with sour cream, jalapeños, and avocado if desired.

Notes

For more heat, use spicy salsa or add extra jalapeños between the layers.
Corn tortillas hold up better; flour tortillas will be softer.
This casserole freezes well—cool completely before freezing.
