Slow Cooker Tuscan Chicken is a creamy, flavorful dinner featuring tender chicken breasts simmered with sun-dried tomatoes, spinach, garlic, and Parmesan in a luscious sauce. Perfect for busy weeknights or cozy family meals!
Ingredients
4 boneless, skinless chicken breasts (or thighs if preferred)
1 ½ teaspoons Italian seasoning
1 teaspoon onion powder
1 teaspoon salt (or to taste)
½ teaspoon black pepper
3 garlic cloves, minced
½ cup sun-dried tomatoes, chopped
1 cup chicken broth
1 cup heavy cream (or plant-based milk for dairy-free option)
½ cup grated Parmesan cheese
3 cups fresh spinach, chopped
Optional: cooked pasta or rice for serving
Instructions
Season chicken breasts on both sides with Italian seasoning, onion powder, salt, and pepper.
Spray the inside of the slow cooker with nonstick cooking spray. Place seasoned chicken in the bottom of the crockpot.
In a medium mixing bowl, whisk together chicken broth, heavy cream, minced garlic, chopped sun-dried tomatoes, and Parmesan cheese.
Pour the sauce over the chicken in the crockpot.
Cover and cook on High for 3 hours or Low for 5 hours until the chicken is tender and fully cooked.
Right before serving, stir in chopped spinach. Replace the lid and allow spinach to wilt for 5 minutes.
Taste and adjust seasoning if needed. Serve over pasta, rice, or your preferred base. Enjoy!
Notes
Chicken thighs can be substituted for chicken breasts for extra juiciness.
For a lighter version, replace heavy cream with half-and-half or plant-based cream.
Leftovers can be stored in the fridge for up to 3 days. Reheat gently and add a splash of broth or cream if needed.
