These Slow Cooker Unstuffed Cabbage Rolls bring all the hearty comfort of traditional cabbage rolls—without the rolling! Packed with tender cabbage, seasoned ground beef, and a rich tomato sauce, this easy one-pot meal is perfect for busy weeknights.
Ingredients
For the Meat Mixture:
1 pound ground beef
1 yellow onion, diced
1 teaspoon dried thyme
2 teaspoons dried parsley
1/4 teaspoon red pepper flakes
1 teaspoon kosher salt
For the Cabbage and Sauce:
1 small head green cabbage
14-ounce can petite diced tomatoes
6-ounce can tomato paste
2 tablespoons Worcestershire sauce
1/2 cup water
Instructions
Brown the Meat
In a skillet over medium-high heat, crumble and brown the ground beef until just a little pink remains. Drain excess fat. Add onion, thyme, parsley, red pepper flakes, and salt; cook for 3–5 minutes until onions soften. Transfer to slow cooker.Prepare the Cabbage
Chop the cabbage into 1-inch pieces and add to slow cooker.Make the Sauce
In a bowl, mix diced tomatoes, tomato paste, Worcestershire sauce, and water. Pour over the meat and cabbage; stir gently to combine.Cook
Cover and cook on LOW for 6–8 hours, stirring halfway through if possible. Serve hot over rice, mashed potatoes, or noodles.
Notes
For a leaner option, substitute ground turkey or chicken.
Add extra red pepper flakes or hot sauce if you prefer a spicier kick.
Leftovers store well in the fridge for up to 4 days or can be frozen for 3 months.
