Description

Slow Cooker Whole Chicken with Garlic and Herbs is a comforting, set-it-and-forget-it dinner made with simple pantry ingredients.   • 1 whole chicken (45 pounds), giblets removed

  • 1 tablespoon olive oil

  • 1 tablespoon salt

  • 1 teaspoon black pepper

  • 1 tablespoon dried thyme

  • 1 tablespoon dried rosemary

  • 1 tablespoon dried oregano

  • 1 lemon, quartered

  • 56 cloves garlic, minced

  • 1 cup low-sodium chicken broth

  • Fresh herbs for garnish (optional)


Instructions

  1. Rinse the whole chicken under cold water and remove any giblets. Pat completely dry with paper towels.

  2. In a small bowl, mix olive oil, salt, black pepper, thyme, rosemary, and oregano to form a seasoning paste.

  3. Rub the seasoning paste all over the chicken, including under the skin and inside the cavity.

  4. Stuff the chicken cavity with the lemon quarters and minced garlic.

  5. Pour the chicken broth into the bottom of the slow cooker.

  6. Place the chicken breast-side up in the slow cooker.

  7. Cover and cook on low for 6–8 hours or on high for 4–5 hours, until the internal temperature reaches 165°F.

  8. Carefully remove the chicken and let it rest for 10 minutes before carving.

  9. Serve warm, garnished with fresh herbs if desired.

Notes

For crispier skin, place the cooked chicken under the broiler for 2–3 minutes before serving.

Vegetables like potatoes, carrots, or onions can be added to the slow cooker for a one-pot meal.

Leftovers are perfect for salads, sandwiches, soups, or wraps.
