Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar

2 cups + 2 tablespoons all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 package 3 oz strawberry-flavored gelatin mix
¼ cup powdered sugar, for dusting
24–30 chocolate kiss candies, unwrapped
Instructions
In a large bowl, beat butter and sugar until light and fluffy.
Add egg, vanilla, and almond extract if using; mix until combined.
Mix in strawberry gelatin until evenly incorporated.
In a separate bowl, whisk flour, baking powder, and salt. Gradually add to the wet mixture until a soft dough forms.
Roll dough into 1-tablespoon balls and place on a lined baking sheet. Chill for at least 1 hour.
Preheat oven to 350°F. Arrange chilled dough balls 2 inches apart and bake for 11–13 minutes.
Let cookies rest 2 minutes, then gently press a chocolate kiss into the center of each.
Cool completely and dust with powdered sugar.
