Ingredients
2 cups fresh corn kernels (about 4 ears)
1 can (14.75 oz) creamed corn
1 cup sour cream (full-fat)
1 cup shredded cheddar cheese (medium to sharp)
1/4 cup raw or local honey
1/4 cup unsalted butter, melted
1/2 cup cornmeal (medium or fine grind)
1 tsp baking powder
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
2 large eggs, beaten
Optional: chopped chives or parsley for garnish
Instructions
Preheat oven to 350°F (175°C).
In a large bowl, mix fresh corn, creamed corn, sour cream, cheddar cheese, honey, and melted butter.
In a separate bowl, whisk together cornmeal, baking powder, salt, pepper, and garlic powder.
Gradually stir dry ingredients into wet mixture until just combined.
Fold in the beaten eggs gently.
Grease a 9×13 inch baking dish and pour in the mixture, spreading evenly.
Bake for 35–40 minutes, until golden brown and a toothpick comes out clean.
Let cool slightly, garnish with chives or parsley, and serve.
Notes
For a cheesier kick, add a blend of cheddar and Monterey Jack.
Frozen corn works if fresh isn’t available—just thaw and drain.
Make it ahead by assembling the day before and baking fresh.
