  • 2 cups fresh corn kernels (about 4 ears)

  • 1 can (14.75 oz) creamed corn

  • 1 cup sour cream (full-fat)

  • 1 cup shredded cheddar cheese (medium to sharp)

  • 1/4 cup raw or local honey

  • 1/4 cup unsalted butter, melted

  • 1/2 cup cornmeal (medium or fine grind)

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp garlic powder

  • 2 large eggs, beaten

  • Optional: chopped chives or parsley for garnish


Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a large bowl, mix fresh corn, creamed corn, sour cream, cheddar cheese, honey, and melted butter.

  3. In a separate bowl, whisk together cornmeal, baking powder, salt, pepper, and garlic powder.

  4. Gradually stir dry ingredients into wet mixture until just combined.

  5. Fold in the beaten eggs gently.

  6. Grease a 9×13 inch baking dish and pour in the mixture, spreading evenly.

  7. Bake for 35–40 minutes, until golden brown and a toothpick comes out clean.

  8. Let cool slightly, garnish with chives or parsley, and serve.

Notes

For a cheesier kick, add a blend of cheddar and Monterey Jack.
Frozen corn works if fresh isn’t available—just thaw and drain.
Make it ahead by assembling the day before and baking fresh.
