  • 2 medium sweet potatoes, peeled and sliced into ¼-inch rounds

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • 6 oz Brie cheese, sliced

  • ½ cup dried cranberries

  • ½ cup toasted pecans

  • Optional: fresh rosemary for garnish


Instructions

  1. Prep the sweet potatoes: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Roast: Arrange sweet potato slices in a single layer. Drizzle with olive oil, sprinkle with salt and pepper, and toss lightly. Roast for 20–25 minutes, flipping halfway through, until tender and lightly golden.

  3. Add the Brie: Remove from the oven and top each round with a small slice of Brie. Return to the oven for 5 minutes, or until the Brie just begins to melt.

  4. Top and serve: Remove from the oven and finish each round with dried cranberries and toasted pecans. Garnish with fresh rosemary if desired. Serve warm or at room temperature.

Notes

For a sweeter finish, drizzle with a touch of honey or maple syrup before serving.
