Instructions

Prep the sweet potatoes: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Roast: Arrange sweet potato slices in a single layer. Drizzle with olive oil, sprinkle with salt and pepper, and toss lightly. Roast for 20–25 minutes, flipping halfway through, until tender and lightly golden.

Add the Brie: Remove from the oven and top each round with a small slice of Brie. Return to the oven for 5 minutes, or until the Brie just begins to melt.
