  • 2 lb hot breakfast sausage

  • 1 (30–32 oz) bag frozen tater tots

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • 1 1/2 cups shredded cheddar cheese

  • 1/2 cup mozzarella cheese

  • 8 eggs

  • 2 cups milk


Instructions

  1. Preheat oven to 350°F. Lightly spray a 9×13-inch baking pan with cooking spray.

  2. Cook sausage in a large skillet until no longer pink. Drain excess fat.

  3. In a large bowl, toss together the tater tots, cooked sausage, cheddar, and mozzarella. Spread into the prepared baking dish.

  4. Whisk together eggs, milk, salt, pepper, garlic powder, and onion powder. Pour evenly over the casserole.

  5. If preparing ahead, cover and refrigerate until ready to bake.

  6. Bake uncovered for 60–70 minutes, or until the eggs are set and the top is golden and bubbly. Allow to cool slightly before serving.
