  • 1 tsp dried thyme

  • 1 bay leaf

  • Salt and pepper to taste

Instructions

  1. Brown the Beef: Heat a bit of oil in a large pot over medium heat. Add stew meat and brown on all sides.

  2. Add Aromatics: Stir in chopped onion and garlic. Cook until soft and fragrant, about 2 minutes.

  3. Build the Flavor: Add tomato paste and cook for 1 minute. Stir in thyme, bay leaf, salt, and pepper.

  4. Simmer the Stew: Pour in beef broth, scraping the bottom to deglaze. Add carrots and potatoes. Bring to a boil, then reduce heat and simmer for 1 to 1.5 hours until beef is tender.

Notes

To make in a slow cooker, brown beef and sauté aromatics first, then transfer everything to the crockpot. Cook on low for 6–8 hours or high for 4–5 hours.
If the broth gets too thick, just add a splash of water or broth.
Leftovers taste even better the next day!
Make it festive by topping with a sprig of thyme “broomstick.”
