Ingredients
1.5 lbs Boneless, Skinless Chicken Breast – cut into 1-inch cubes
1/4 cup Fresh Lemon Juice
2 tbsp Olive Oil
2 cloves Garlic – minced
1 tsp Dried Oregano
1 tsp Dried Thyme
1 tsp Paprika (smoked paprika optional)
1/2 tsp Salt
1/4 tsp Black Pepper
Optional: 1 tbsp Fresh Parsley – chopped
Optional: Lemon Wedges – for serving
Instructions
Cut chicken breasts into 1-inch cubes and place in a bowl.
In a small bowl, whisk together lemon juice, olive oil, garlic, oregano, thyme, paprika, salt, and pepper.
Pour marinade over chicken, toss to coat, and refrigerate for at least 30 minutes (up to 2 hours).
Preheat the air fryer to 400°F (200°C).
Arrange chicken bites in a single layer in the basket. Avoid overcrowding.
Air fry for 10–12 minutes, flipping halfway, until golden brown and internal temperature reaches 165°F.
Rest for 2 minutes, garnish with parsley, and serve with lemon wedges.
Notes
Don’t marinate longer than 2 hours or the lemon juice may affect the texture.
For best results, cook in batches if needed to avoid crowding the air fryer.
Reheat leftovers in the air fryer for 3–4 minutes at 350°F to restore crispiness.
Works great with chicken thighs as well—just adjust cooking time slightly.
