A cozy and creamy Cheddar Bay Chicken Cobbler topped with buttery cheddar biscuits. This comforting casserole is perfect for busy weeknights, family dinners, or anytime you’re craving warm, cheesy goodness.

Ingredients

Scale
  • 2 cups cooked, shredded chicken

  • 1 packet Cheddar Bay Biscuit mix (plus ingredients listed on packet)

  • 1 ½ cups milk

  • 1 cup chicken broth

  • 1 cup frozen mixed vegetables

  • ½ cup sour cream

  • 1 can cream of chicken soup

  • 1 tsp garlic powder

  • ½ tsp black pepper

  • 1 tbsp fresh parsley (optional)

  • 1 ½ cups shredded cheddar cheese

  • 2 tbsp butter, melted

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  2. In a large bowl, whisk together milk, sour cream, and cream of chicken soup until smooth.

  3. Stir in garlic powder, pepper, frozen vegetables, and shredded chicken.

  4. Pour the mixture into the prepared baking dish and spread evenly.

  5. In a separate bowl, prepare the Cheddar Bay Biscuit mix according to package instructions. Stir in shredded cheddar cheese.

  6. Drop spoonfuls of the biscuit dough evenly over the chicken mixture.

  7. Drizzle melted butter over the biscuits and sprinkle with parsley.

  8. Bake for 40–45 minutes or until biscuits are golden brown and cooked through.

  9. Let rest 5 minutes before serving.

Notes

Rotisserie chicken works perfectly for this recipe.

Add mushrooms, spinach, or extra vegetables for more fiber.

Cover loosely with foil if the biscuits brown too quickly.

For deeper flavor, add a splash of heavy cream to the filling.
