Description

Cookie Bars

  • ½ cup butter, melted

  • ¾ cup granulated sugar

  • ¼ cup dark brown sugar

  • ½ teaspoon pure vanilla extract

  • ⅓ cup molasses

  • 1 large egg

  • 2 cups all-purpose flour

  • 2 teaspoons baking soda

  • 1 tablespoon ground cinnamon

  • ½ teaspoon ground ginger

  • ¼ teaspoon ground nutmeg

  • ¼ teaspoon ground cloves

  • ½ teaspoon salt

Cream Cheese Frosting

  • 6 ounces cream cheese, softened

  • 3 tablespoons butter, softened

  • 2 ¼ cups powdered sugar

  • ¾ teaspoon vanilla

  • Holiday sprinkles (optional)


Instructions

  1. Preheat the oven to 350°F and grease a 9×13-inch jelly roll pan with non-stick spray.

  2. In a large bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.

  3. In a stand mixer or using a handheld mixer, beat together melted butter, granulated sugar, brown sugar, vanilla, and molasses for 2–3 minutes until fluffy.

  4. Add the egg and mix until smooth.

  5. Add the dry ingredients and mix until fully combined.

  6. Spread the dough evenly into the prepared pan.

  7. Bake 15–20 minutes, or until set and a toothpick comes out with a few moist crumbs. Cool completely.

  8. For the frosting, beat cream cheese and butter until fluffy. Add powdered sugar and vanilla and mix until creamy.

  9. Spread frosting over cooled bars, decorate with sprinkles, slice into 24 bars, and serve.

Notes

Don’t overbake—the bars stay soft and chewy when slightly underdone.

For thicker frosting, add more powdered sugar; for thinner, add a teaspoon of milk.

Bars store well covered for up to 5 days and freeze great unfrosted.
