For the Chicken Crust:

  • 1 lb ground chicken
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp dried Italian herbs (oregano, basil)
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil (for cooking)

For the Caesar Salad Topping:

  • 2 cups romaine lettuce, chopped
  • 1/4 cup creamy Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup cooked chicken pieces, seasoned and crisped or chicken bacon bits (optional)
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix ground chicken, mozzarella, Parmesan, egg, Italian herbs, garlic powder, salt, and pepper until well combined.
  3. Press the mixture into a flat 10–12 inch round crust on the prepared baking sheet. Make it even in thickness.
  4. Bake for 20–25 minutes, or until golden brown and fully cooked through.
  5. While the crust bakes, toss chopped romaine with Caesar dressing and Parmesan in a bowl.
  6. Remove crust from oven and let cool for 3–5 minutes to firm up.
  7. Top evenly with Caesar salad mixture.
  8. Add crispy chicken pieces or chicken bacon bits if using.
  9. Finish with extra Parmesan and freshly ground black pepper.
  10. Slice and serve immediately.

Notes

  • Let the crust cool slightly before topping to prevent sogginess.
  • For extra crispiness, flip the crust and bake 3–5 additional minutes.
  • Store crust and salad separately if saving leftovers.
